Today we really start rolling on the 7 Day-Junk Foods to Super Foods Challenge
On DAY 3 you will want to consume the following:
- 1 pound non-starchy vegetables
- 3 fruit servings
- 1 cup of beans
- Anything else you like
So you see that you are adding beans to the fruits and vegetables we added earlier in the week.
Fruit is great for the morning. It is easy to grab and go and your body handles the natural sugars well in the morning.
To meet your bean requirement, consider making chili. I recommend cooking up a pot of Dad’s Easy Chili. This goes great with a good football game :-).
If you are looking for a crunch you could make Green Cabbage Slaw and put a 1/2 cup to a cup on top of your chili (don’t knock it till you try it!). This is a nice texture to go with the chili and it satisfies some of your vegetable requirements for the day.
Throw in a couple of side salads for lunch and dinner or snack on some raw veggies and you meet your full veggie requirement.
As for how much to eat today, you want to eat until you are full. There is no need to count calories because the superfoods that you are consuming are high in nutrients and low in calories.
If you eat all of the required foods today you will be eating a lot of food and while you still might want snacky junk food, you should be filled up due to the volume of foods you are eating.
